Ramen isn’t just one flavor and one type of noodles, it’s specific to a type of ramen from a certain Region. Almost every part of Japan has it’s own style of ramen. There are so many regions we can mention but we will talk about the ones that have become famous worldwide.

First up is Tokyo style ramen. This ramen typically uses thin, curly noodles with a light soy-flavored chicken broth. The Standard toppings for this ramen are scallions, menu, pork chashu, kamaboko, egg, spinach and seaweed.

Second up is Sapporo style ramen from Hokkaido. This ramen is famous for it’s rich thick soup. Miso ramen originates from here and is probably one of the most famous ones on our list. The regular toppings are corn, butter, bean sprouts, garlic and pork chashu. Many places also offer “Seafood” variations.

Third up is Kitakata style from Honshu. This ramen uses a thick/flat curly noodles with pork and niboshi broth. Ramen is so popular in this region that it is known to have the most ramen establishments in one area.

Forth up is Hataka Ramen from Fukuoka in Kyushu. This ramen uses a thin resilient noodles. It’s served with a rich and milky tonkotsu broth. Toppings are usually  garlic, pickled ginger, sesame seeds, and spicy pickled mustard greens. This style of ramen is also very popular as several chain restaurants are found all over Japan.

Next up is Wakayama style ramen from the Kansai region. The main flavor for this ramen is shoyu mixed with pork bones. While there isn’t too much to say about this ramen, it’s popular enough that we have to mention this style.

And last but not least, Yokohama style ramen! You might be already familiar with this style since it is the style for Yaguchiya Ramen! It’s commonly referred to as Iekei style ramen. This style of ramen uses a thicker style of noodles. It’s served in a chicken and pork broth to create a lighter balance. Customers typically choose how they want their noodles cooked as well as flavor level and oil.

Chashu Bowl – チャーシュー丼

One of our popular side dishes is our Chashu Bowl. This rice bowl or donburi is unique as chicken or beef rice bowls are usually the more common rice bowls served in Japanese restaurants.

Our chashu bowl is made with the sam delicious chashu we use on our ramen! It’s diced into small pieces and mixed with garlic shoyu, diced leek and chicken oil for a flavourful taste. We also off it in a spicy variation!!

Shoyu Ramen at Yaguchiya - 醤油ラーメン

Today we want to talk a bit about Shoyu Ramen. Shoyu is Japanese for “soy sauce”. Shoyu is probably the most famous flavor of ramen and almost every ramen shop serves this flavor. But what makes the Shoyu ramen at Yaguchiya Ramen, different from everyone else?

As we’ve mentioned before, Yaguchiya Ramen serves Iekei style ramen which has originated from Yokohama Japan. “Shoyu” is the classic flavor of this particular style of ramen. Which means our signature ramen on our menu is our Shoyu!
Our Shoyu ramen is made up of our Iekei soup base, which is a mix of chicken and pork added with some delicious chicken oil. Next we blend this soup base with Shoyu which is made in house from our very own recipe! The ramen is the topped with the classic toppings of Iekei style, which is spinach, seaweed and chashu.
We also offer a “Special” version of the Shoyu, which is all the normal toppings with more seaweed, more chashu, shredded leek and our seasoned egg!

Yaguchiya Blog in Canada - 矢口家ラーメン

Welcome to Yaguchiya-Ramen’s blog! Here we will write about our Ramen and other fun facts relating to Ramen! But first, an introduction of what Yaguchiya Ramen is and where we come from.

Yaguchiya Ramen is named after Yaguchi-San, who has been a ramen master since 1994. He always dreamt of opening a ramen shop somewhere in North America and succeeded in opening his first Canadian location in B.C. Burnaby just last year in May!

Yaguchiya Ramen is a iekei style of ramen that originated from Yokohama, Japan in 1994. In the year 1997, the second restaurant opened in Hiratsuka City. Yaguchiya Ramen has welcomed and served it’s customers for over 24 years.

Iekei ramen is the signature ramen from Yokohama which first appeared in 1974 in the Kanagawa Prefecture. Iekei means “house-type” from the kanji “家”. Iekei ramen is the perfect balance of the popular Tonkatsu Style from Kyushu in the West, and Shoyu Style from Tokyo in the East. This type of ramen typically is made up of pork and chicken in the soup base mixed in with shoyu, topped with chashu pork slices, spinach and roasted seaweed. However, there are many variations that can be made with this style of ramen including traditional Miso, Shio and Spicy Ramen.

Our goal is to deliver this amazing great taste of Yokohama style ramen and bring authenticity to our Canadian customers! Stay tuned as we will have more Ramen posts coming soon!
