Yaguchiya soup base - 矢口家スープ

So far in our blog, we have talked about the different types of ramen flavors and how we serve them at Yaguchiya Ramen. Today we will talk about the soup base, which is what makes our ramen “Iekei” style ramen. We may have mentioned before what Iekei style ramen is but if you are reading about this for the first time, heres a quick recap.

Japanese Ramen has many different variations from different regions of Japan. Iekei ramen originates from Yokohama, Kanagawa Prefecture. It was first made around the year 1974. While Iekei style ramen uses certain noodles and toppings, we will just talk about the soup base.

Iekei style ramen is the perfect balance of the popular Tonkotsu style from Kyushu in the West, and the Shoyu style from Tokyo in the East. The soup base is primarily made up of pork bones and chicken bones boiled over a long period of time. When it is ready to serve, you get a light and flavorful soup. This base is traditional mixed with shoyu, but we offer this soup base in shio, miso and spicy ramen as well. We are constantly cooking this soup all day, so you can always expect to be served a steaming hot bowl of ramen!!

Yaguchiya Special Ramen - 矢口家スペシャルラーメン

Spicy Ramen at Yaguchiya - スパイシーラーメン

Today we will talk about Spicy Ramen. Spicy Ramen isn’t as traditional as the other main flavours like Miso, Shoyu and Shio, however it does have its own place in ramen cuisine.

Like most other ramen, there are many variations on how each ramen is put together. We’ll talk a little bit about how Yaguchiya’s Spicy Ramen is put together. The base is using our delicious Iekei style broth. Then we blend in our special spicy miso paste and our Shoyu which is both made in house!

For toppings, we add spinach, bean sprouts, chashu and a pinch of shredding chilli pepper. Enjoy the heat with each slurp!!

Shio Ramen at Yaguchiya - 塩ラーメン

Today we will talk a bit about Shio Ramen. Shio is Japanese for “Salt”. The kanji for shio is 塩. Which means this is salt ramen! This type of ramen is actually the first flavor to be used when ramen was first invented!

Shio ramen is typically a lighter flavor of ramen compared to it’s Shoyu brother or other flavors. It allows you to taste the broth base of the ramen more. While there are many variations of how ramen is made, we will talk about Yaguchiya’s Shio ramen. 

Our Shio ramen uses our Iekei style broth, which is made up of chicken and pork. We add Shio flavor to this broth along side with our egg noodles, It’s then topped with spinach, seaweed, and 2 pieces of chashu. Even better when you order extra toppings, it’s perfect with corn and our seasoned egg!

Shoyu Ramen at Yaguchiya - 醤油ラーメン

Today we want to talk a bit about Shoyu Ramen. Shoyu is Japanese for “soy sauce”. Shoyu is probably the most famous flavor of ramen and almost every ramen shop serves this flavor. But what makes the Shoyu ramen at Yaguchiya Ramen, different from everyone else?

 

As we’ve mentioned before, Yaguchiya Ramen serves Iekei style ramen which has originated from Yokohama Japan. “Shoyu” is the classic flavor of this particular style of ramen. Which means our signature ramen on our menu is our Shoyu!
Our Shoyu ramen is made up of our Iekei soup base, which is a mix of chicken and pork added with some delicious chicken oil. Next we blend this soup base with Shoyu which is made in house from our very own recipe! The ramen is the topped with the classic toppings of Iekei style, which is spinach, seaweed and chashu.
We also offer a “Special” version of the Shoyu, which is all the normal toppings with more seaweed, more chashu, shredded leek and our seasoned egg!

Yaguchiya Blog in Canada - 矢口家ラーメン

Welcome to Yaguchiya-Ramen’s blog! Here we will write about our Ramen and other fun facts relating to Ramen! But first, an introduction of what Yaguchiya Ramen is and where we come from.

 

Yaguchiya Ramen is named after Yaguchi-San, who has been a ramen master since 1994. He always dreamt of opening a ramen shop somewhere in North America and succeeded in opening his first Canadian location in B.C. Burnaby just last year in May!

 

Yaguchiya Ramen is a iekei style of ramen that originated from Yokohama, Japan in 1994. In the year 1997, the second restaurant opened in Hiratsuka City. Yaguchiya Ramen has welcomed and served it’s customers for over 24 years.

 

 

Iekei ramen is the signature ramen from Yokohama which first appeared in 1974 in the Kanagawa Prefecture. Iekei means “house-type” from the kanji “家”. Iekei ramen is the perfect balance of the popular Tonkatsu Style from Kyushu in the West, and Shoyu Style from Tokyo in the East. This type of ramen typically is made up of pork and chicken in the soup base mixed in with shoyu, topped with chashu pork slices, spinach and roasted seaweed. However, there are many variations that can be made with this style of ramen including traditional Miso, Shio and Spicy Ramen.
